Very Berry Chocolate-y Overnight Oats

Soft oats meet creamy nut butter and fresh or frozen fruit for a wholesome and flavorful way to kickstart your day. Preparation is easy and done at night, so you have a ready-to-eat and satisfying breakfast without the morning rush.

Ingredients

1 TBSP all-natural, creamy nut or seed butter of choice

1 small ripe banana

Pinch of salt, optional

Dash of almond extract or vanilla extract, optional

2 tsp unsweetened cocoa powder

1/3 cup rolled oats

1/3 cup unsweetened almond milk (or milk of choice)

Any or all of the following: dried cherries, dried cranberries, frozen or fresh berries (blueberries, strawberries, raspberries)

Granola and/or coconut flakes (optional, do not use granola for IBD-AID)

26 grams rolled oats

80 ml unsweetened almond milk (or milk of choice)

Granola and/or coconut flakes (optional, do not use granola for IBD-AID)

Instructions

  • In a bowl, mash together nut/seed butter and banana with a fork until combined
  • Add salt and extract (if using), cocoa powder, oats and milk to the bowl
  • Whisk together all ingredients until combined
  • Top with dried fruit and berries, if desired
  • Refrigerate overnight
  • Can top with granola (leave out for IBD-AID) and/or coconut flakes before eating

It's important to note that oats are an excellent source of soluble and viscous fiber, which can aid in forming bowel movements and improve symptoms associated with diarrhea, fecal urgency, and/or incomplete evacuation.
