Instructions

  • Finely grate the zest of the lemon.
  • Squeeze the lemon.
  • Chop the garlic very fine.
  • Add the vinegar to the lemon zest, juice, and garlic and whisk well.
  • Then add the olive oil and whisk again.
  • Finally, add salt and pepper to taste.
  • Leave the dressing in the fridge for a few hours to allow the flavors to blend well.
  • If the dressing is left in the fridge longer, it may harden because of the olive oil. Take it out 15 minutes before use.
